● 350 g plain flour
● 2 tsp ground ginger
● 1 tsp bicarbonate of soda
● 100 g butter
● 175 g soft light brown sugar
● 1 egg
● 4 tbsp golden syrup
● Icing sugar
Mix the flour, ginger and bicarb in a bowl, and rub in the butter.
Add the sugar.
Stir in the syrup and egg to make a firm dough.
Roll it out to about 5 mm thick and cut out with a star cutter.
Put the shapes on a sheet of baking paper on an oven tray, spacing them out a bit.
Bake for 10-15 minutes at 160°C until nicely brown.
Let them cool for a little while and then lift them up and put them on a wire rack to finish cooling.
Once completely cool, mix the icing sugar with a little water and pipe round the edges with it.
